I found that what was keeping the old temp sensor electrical connection attached to the stove-side connection was a little tab. It wasn't obvious that that was the thing that was keeping the connection secure but there weren't any other alternatives. So pushing the tab up with the metal probe (just a narrow rigid metal wire) allowed me

to pull the connection apart.
All this takes place way at the back of the oven so its difficult to fiddle with a screwdriver and the retaining screws at arms length. Putting a bit of scotch tape around the screw to keep it attached to the screwdriver kept it from falling off. My hand was a bit shaky extended like that so that was the way to go.
Bottom line, if your oven won't reach or hold the temp you dial in on the control panel it's the temperature sensor. Now if I set it for 300 deg. that's what I get.

Taking off the glass lense for the light bulb was harder than I thought. It unscrews counterclockwise, but it was very hard to get off. It would not turn. I ended up using connector pliers I use for work, that has rubber jaws. The lense unscrewed very easy with it. Light also unscrews out. PartSelect.com is the only way to go to buy parts

Wiring Block shorted due to moisture and Stove had no Power

This was very straight forward. Once the sheet metal shroud on the back side was removed just had to undo the one remaining wire, remove the block, and reassemble. Only question I had was which wires went where. The Wiring Block was melted due to the short and the wires were no longer attached. Did a quick google for a typical oven three-
